I just came across this awesome article on
foodconsumer.org giving a giant list of super healthy foods. Not only that but it explains why and gives some interesting information as well. My new favorite fun fact...Eggs have 14% less cholesterol today than eggs did just 10 years ago. How they managed that, I'm not sure, but I say welcome back to the incredible, edible egg!
I would think that less cholesterol in eggs would have to be because there are many many more cage free and organic egg options out there today than there were even 5 years ago, let alone 10. So it may not be that ALL eggs are better, but cage free chickens that live on a healthy diet must produce eggs that are healthier than those that come from huge farms where chickens are fed only cornmeal and kept in tiny cages.
